Pumpkin Pie
Ingredients:
4 eggs
1 15 oz. can pumpkin puree
1/2 15 oz. can coconut milk (fatty top half if possible)
2 1/4 teaspoon pumpkin pie spice - we use Simply Organic brand "Pumpkin Spice"
scant 1/2 teaspoon stevia glycerite
1 gf, df, sugar free pie crust (see recipe my blog "Easy Cherry Berry Pie")
Directions:
1. Preheat oven to 350º f.
2. Blend first 4 ingredients well, then pour into pie crust.
3. Bake 55 minutes, let cool & enjoy!
Egg-Free Pumpkin Squares
Ingredients:
1 15 oz. can pumpkin puree
1/2 15 oz. can coconut milk (fatty top half)
1 teaspoon vanilla
2 teaspoons pumpkin pike spice (we use Simply Natural brand)
1/2 teaspoon stevia glycerite
1/4 teaspoon fine pink or sea salt
4 Tablespoons gelatin (we use Great Lakes brand)
Directions:
1. Blend well in high-speed blender.
2. Pour into bake-proof glass storage dish (without lid)
3. Bake 35 minute.
4. Cool, then chill in fridge for 2 hours or until set & inserted knife comes clean.
5. Cut in squares and enjoy!
These travel well! Perfect for fall pumpkin patch adventures :)
