Tacos!

Last night was Taco Tuesday for us!  The neighborhood was hopping with kids out in the sunny spring evening, and more than one were heading home for their family's taco dinner.  

Why do I love Taco Tuesday?

Because I love feeding my family's friendly bacteria their favorite foods!

Yep, veggies - and the more different colors the better, because different colors (and textures and flavors) are feeding different kinds of bacteria, and the more diversity the better.  These beneficial bacteria are balancing our children's immune systems (located primarily in their gut!), supporting neurotransmitter production (keeping them bright and steady), nutrient release and digestion (yay for daily bowel movements!), and lots more.  

...and I also love Taco Tuesday because it's easy and delicious.   Everyone gets to make their own, just the way they like it, and all I have to do is sauté onions and ground beef with chili and cumin, and chop up a bunch of vegetables.  Here's a picture of our table last night:

Shredded cabbage, quartered cherry tomatoes, some ruby red beet kraut, sliced avocado, (I forgot the grated carrots), lime wedges, cashew cheddar cheese, (CoYo plain coconut yogurt is a nice sour cream alternative, or it's easy to soak a cup of cashews for an hour and blend with a teaspoon of lemon into a faux sour cream), lots of chopped cilantro, (where are the cucumbers?!?) and lettuce boats to put it all in!  (Sometimes we use Siete brand tortillas too.)

I can chop and throw things into bowls and onto the table fast!  The meat takes ten minutes tops, and cleanup is a breeze.

OH, here's a tiny secret:  I mixed about 1/4 lb of pureed chicken livers into the 1 lb of ground beef - shhh!

PS  I love making the next day's lunch from dinner so it's ready to go in the morning - colorful taco fixings are an easy winner!
