Pancakes and whip in the lunchbox!
My little boy unloaded his lunchbox with his yogurt untouched. ???
He loves this yogurt - we get the plain GT's cocoyo, and he'll dress it up with stevia glycerite and yummy alcohol free organic vanilla, or maybe banana extract, and go to school with a labeled jar of this tasty sweet treat that's loaded with great fats and probiotics.
He put it on the counter, looking glum, and said the kids called it baby food.
Oh, boy. That got my mama-hackles up.
"Hmmm. Well, I think those Go-Gurt things look like baby food. Want pancakes for lunch tomorrow?" With (coconut) whipped topping and (yacon) syrup?"
I made up a pancake recipe on the spot with what we had on hand, and added a tin of chicken salad (lots of veggies and kraut), plus some fresh sliced fennel (so sweet!), carrots, cucumbers and more kraut, plus chunks of kiwi and a block of parmesan-style non dairy no-nut cheese right in the middle.
Yep, it's on, teasing kids - watch my kiddo enjoy his awesome pancake breakfast lunch!
And yes, be jealous ;)
Last-Minute Pancakes
1 cup coconut flour
1/4 cup tapioca flour
1/4 cup arrowroot flour
1/4 cup collagen powder
2 teaspoons baking powder
pinch sea salt
2 cup water
1 Tablespoon vanilla
Directions:
Combine wet ingredients, combine dry ingredients, mix them together and fry in coconut oil on med hot skillet.
Cool on racks (in the freezer to speed it up)
Pack with coconut whipped cream and yacon syrup in separate containers (and tiny bit of smugness).
